From the Editor’s Desk: Irish Soda Bread
I love St. Patirck’s Day! And not for the reasons a lot of people do. I don’t really drink much, but love all things Irish! I have Irish roots on both sides of my family and I have always found myself drawn to the Emerald Isle.
In honor of my second favorite holiday (Halloween holds the number one spot) I am sharing with you my family recipe for Irish Soda Bread. This bread is quick and easy and doesn’t require yeast.
Ingredients
4 cups all-purpose flour
4 tablespoons Sugar – makes it a sweet bread
1/2 tsp Salt
1 tsp Baking soda – makes the bread rise
1 tablespoon Baking powder
1/2 cup Butter – (unsalted)
1 cup Buttermilk – activates the soda (use cold, low-fat)
1 large Egg – for a finer, richer crumb
** Raisins – optional and can be substituted for dried cranberries
Preheat the oven to 375 degrees F. Lightly grease a large baking sheet.
Mix flour, sugar, baking soda, baking powder, and salt together in a large bowl.Slowly add the butter and if using the optional raisins add them as well. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on the prepared baking sheet.
Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean,about 50 minutes.
TIP: there’s no reason to bring ingredients to room temperature. Keep buttermilk, egg, and butter slightly chilled.
